? Hi Friends! Why does pineapple burn your tongue? Every single pineapple in where I live - in Costa Rica - is picked for export. Now, if they can't sell it on the export market, then they sell it locally. But what that means is that they pick them too early. And pineapples are among the fruits that do not ripen once they are picked. Yes, they do change color, but they are not going to be sweeter and they are not going to have less acid content. And the problem with pineapple is that it is an acid fruit. 100 g pineapple contain 47-52 calories, 85.3-87.0 g water, 0.4-0.7 g protein, 0.2-0.3 g fat, 11.6-13.7 g total carbohydrate, 0.4-0.5 g fibre, 0.3-0.4g ash, 17-18 mg calcium, 8-12 mg phosphorus, 0.5 mg iron, 1-2 mg sodium and 125-146 mg potassium. Pineapple also contains 12-15 % sugars of which two-third is in the form of sucrose and the rest are glucose and fructose. 0.6-1.2 % of pineapple is
acid of which 87 % is citric acid and 13 % is malic acid. The pH of pineapple is acidic, which is 3.71 and the acidity percentage is 53.5 %. If you pick it too early - pineapple will have high acid content. The same is true with any acid fruit, but oranges have a much longer shelf life than a pineapple. They can't pick a pineapple when it's ripe, and actually get it to the market and sell it most of the time. It's gonna start going bad. And so they pick them early. But then you have something that's too high in acid. If you grow your own pineapples, then that is less of an issue. I say less of an issue, because we pick them here in Tanglewood before they are completely ripe on the plant, because otherwise animals would eat them. I often have a meal of 2/3 or 1 whole pineapple with an avocado. Yes, cause acid fruits combine pretty good with high fat content fruits pretty well in my experience.
