According to scientists, this is the healthiest way to eat broccoli! The vegetable contains a compound called sulforaphane, which, according to previous studies, maintains blood sugar levels and is considered one of the most powerful anti-cancer substances known.

However, the benefits of sulforaphane are destroyed within minutes of cooking and the broccoli must be "damaged" before it can be ingested.
A Chinese study shows that sulforaphane content increases 2.8-fold if the vegetable is cut into pieces and allowed to "rest" for 90 minutes before cooking. While it's unclear why this is, the researchers believe that waiting before cooking the cut broccoli may allow the sulforaphane to "build up".

How was the study conducted? The researchers from Zhejiang College bought several heads of broccoli at a local market. They divided the study groups into three groups.
Some was left as it was, some was cooked immediately for four minutes, and the rest was left for 90 minutes before also being cooked quickly over high heat.
Now you may be wondering, so I should cut the broccoli and let it sit for 90 minutes? Surely you don't have that much time to wait for your favorite vegetable to be ready.
Scientists say that letting broccoli rest, cut open, for 30 minutes is enough. They say it's important to chop the broccoli because the sulforaphane can only be absorbed if the vegetable is 'damaged."
But rest assured. If you don't have 30 minutes plus of preparation time to get this benefit, you can still get it.
Researchers at the College of Reading found that adding mustard seed powder to cooked broccoli significantly increased the formation of sulforaphane.
So before you eat broccoli, always have a jar of powdered mustard seeds on hand! In addition to these two benefits, eating broccoli helps prevent everything from arthritis to heart disease and even keeps your gut healthy.
